CI.Bio inherited the historical legacy of the market, acquiring the small Norcineria in January 2017 and updating it with unique innovations: for instance, the shop is the only one in the market that sells unbottled wine, like a 2018 Chianti from Radda, declassified – yet nevertheless high quality – and sold at truly affordable prices.
And alongside a glass of red or white wine (€1,50), cured sliced meats and mouthwatering sandwiches: fried bracciolina in Livornese sauce; Pan di ramerino with mortadella; pane natura with marinated herring “alla Rolando”; the poor man’s oyster with anchovies, figs and salami; baked pork loin and artichokes; panino del muratore with stewed beans, butter, and anchovies… and so on.
