Sandra and Roberto arrived at the market eight years ago, taking over from the previous owners and introducing exclusive and highly traditional products: from organic Tuscan goat cheese to a vast assortment of artisan pecorino cheeses, both aged and fresh, as well as parmesan cheese and high quality truffle products. One of their specialities which deserves a special mention is their bread baked with “Ancient Tuscan Grains” from Montespertoli, made in collaboration with the University of Florence and identified by a label that certifies its quality: “Questo è l’originale” [This is the Original].

Above, like a saint protecting the stall, is a creative tribute written by Roberto that quotes Italo Calvino: “And yet, it’s not a question of choosing your cheese, but of being chosen. There’s a reciprocal relationship between cheese and customer. Every cheese awaits its customer, it poses in such a way as to attract him, with a lofty sort of buoyancy or graininess, or, on the contrary, melting into surrender!”
